Day 2

Breakfast: I had a banana smoothie with chocolate protein powder and almond milk! This smoothie has no carbs! My sugar was 7.8

Snack: For my snack i had zucchini chips! Its SUPER easy to make and again has no carbs!

Exercise: I had 45 minutes of yoga! just to clear my mind. I will also be doing day 2 of insanity today.

Lunch: I had a quinoa kale vegetable soup! with some of the vegetables from my dinner last night on the side, i added more food so i would have more energy during my day 2 insanity workout.I had a mug of green tea and a glass of water with my meal. my blood sugar was 6.5 and i put in 20 carbs for this meal.

Day 1 Jan 11th 2016

So today is the first day of my vegan diet! All Photos of my meals are posted on my instagram vegan_diabetic

Breakfast: I woke up not feeling very hungry so i cut some apples up and ate them with almond butter ( peanut butter is not vegan ) i drank green tea black with this meal and 1 glass of water. My blood sugar was 7.6 so i put 21 carbs in for this meal.

Snack: i didnt have a snack today because i had a late breakfast.

Lunch: I had a cauliflower soup (recipe below) with a glass of water. My blood sugar was 6.8 and i put 7 carbs in cauliflower doesnt have many crabs at all. This soup is delicious and filling although it doesnt make you feel bloated at all which i really liked.

Workout: My blood sugar was 8.7 before my workout which is okay because i dont want it to go low during. I did video #1 of insanity which is a 25 minute fitness test! i didnt realize how out of shape i was.

Dinner: For dinner my blood sugar was 5.4. I made vegan big mac with a zucchini bake! It was delicious and doesnt make you feel gross and bloated like a regular burger. I added sweet potatoe and carrots to the zucchini bake which was also SUPER yummy! I had a mug of green tea and a class of water! i only put in 16 carbs

Snack: I didnt have a snack just a mug of green tea before bed!

Overall my first day of this diet made me feel better already. Most vegan foods have barley any carbs so my blood sugar has been super controlled and ive barley had to put insulin in! My body doesnt feel bloated what so ever. 

Introduction

Hello.
Im Ashley ive been a type 1 diabetic for almost 14 years.

 I moved away from home for almost 3 years during those 3 years i was on a very unhealthy diet and wasn't controlling my sugars i gained a lot of weight during that time. When i moved away i was around 120 pounds 3 years later im at 150. Im not happy at all with the way i look and ive decided to do something about it before i gain anymore weight.

 Im going on a full vegan diet im going to be posting my days including workouts and meals ill post the recipes for each meal. I have an Instagram ill be posting on also: vegan_diabetic there ill be posting pictures explaining what im eating and how many carbs.
